RUM BANANA BREAD - November, 2021.

This is ONLY for the adult table. And, it’s delicious.
You’ll have some sweetened-up grown-ups when this is served.
- Ingredients
- 8 tablespoons (1 stick) unsalted butter at room temperature
- 1 cup granulated sugar
- 2 large eggs
- â…“ cup rum
- 1 teaspoon vanilla extract
- 1 ½ cups unbleached all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 cup mashed ripe (very) bananas (approx. 2 bananas)
- ¼ cup sour cream
- Directions
- Preheat oven to 350 degrees F.
- Grease 9” square loaf pan (9” x 5”) with butter or cooking spray.
- Dust with flour and tap out excess.
- Using an electric mixer, cream the butter and sugar in a large bowl.
- Beat in the eggs one at a time until light and fluffy.
- Beat in the rum and vanilla.
- Measure the flour, baking soda, baking powder, salt and cinnamon and sift directly into the butter mixture.
- Beat to thoroughly combine
- Beat in the bananas and sour cream.
- Spread the batter evenly into the prepared pan.
- Bake 70 minutes or until a toothpick inserted in the middle comes out clean or only with crumbs. Remove from the oven.
- Cool in the pan for at least 30 minutes before cutting.
- 10-12 slices or 12-18 squares.
