Legendary Brownies of New York

RUM BANANA BREAD - November, 2021.

This is ONLY for the adult table. And, it’s delicious.

You’ll have some sweetened-up grown-ups when this is served.

 

 

  • Ingredients
  • 8 tablespoons (1 stick) unsalted butter at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • â…“ cup rum
  • 1 teaspoon vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup mashed ripe (very) bananas (approx. 2 bananas)
  • ¼ cup sour cream
  • Directions
  • Preheat oven to 350 degrees F.
  • Grease 9” square loaf pan (9” x 5”) with butter or cooking spray.
  • Dust with flour and tap out excess.
  • Using an electric mixer, cream the butter and sugar in a large bowl.
  • Beat in the eggs one at a time until light and fluffy.
  • Beat in the rum and vanilla.
  • Measure the flour, baking soda, baking powder, salt and cinnamon and sift directly into the butter mixture.
  • Beat to thoroughly combine
  • Beat in the bananas and sour cream.
  • Spread the batter evenly into the prepared pan.
  • Bake 70 minutes or until a toothpick inserted in the middle comes out clean or only with crumbs. Remove from the oven.
  • Cool in the pan for at least 30 minutes before cutting.
  • 10-12 slices or 12-18 squares.
