It’s a crazy concept to incorporate bacon into brownies, but there is something magical about the combination of sweet with smoky and salty. Try it. You’ll like it.
- Ingredients
- 8-12 strips of bacon
- 3 tablespoons unsweetened cocoa powder
- 12 tablespoons (1 ½ sticks) unsalted butter
- 4 ounces bittersweet chocolate (60-80% cacao), chopped into even small pieces
- 1 ¼ granulated sugar
- 3 large eggs
- 1 teaspoon vanilla
- ½ cup and 2 tablespoons all-purpose flour
- Pinch of salt
- Directions
- Preheat the oven to 350 degrees F.
- Grease 9" square baking pan with butter or cooking spray.
- Dust with flour and tap outthe excess
- In a large skillet, fry the bacon strips until crisp.
- Transfer the bacon to paper towels on a plate to drain and dry. Change the paper towels at least once to reduce the amount of grease.
- Crumble the bacon into a small bowl and add the cocoa.
- Warm the butter and chocolate in a small saucepan over low heat. Stir frequently, until almost melted. Remove the saucepan and stir until smooth. Set aside to cool slightly.
- In a large bowl, beat the sugar, eggs and vanilla until creamy with an electric mixer. Add the cooled chocolate mixture and stir until well combined.
- Measure the flour, salt. Sift directly into the chocolate mixture. Mix until no trace of the dry ingredients shows. Stir in the cocoa-covered bacon.
- Spread the batter evenly in the prepared pan.
- Bake 30 – 35 minutes or until a toothpick inserted in the center comes out clean or only with moist crumbs, not batter.
- Remove the pan from the oven and cool in the pan for at least one hour.
- Cut the brownies into squares just before serving. 12- 16 brownis
