Butterscotch Flip - June, 2022.

Doesn’t life contain enough difficult decisions?
Choosing between chocolate or butterscotch should not be a dilemma.
Have both! Here’s a recipe that does just that.
- Ingredients
- Bottom Brownie
- 7 tablespoons unsalted butter
- â…“ cup bittersweet chocolate chips or bittersweet chocolate chopped to small same size pieces
- 2 large eggs
- ½ cup granulated sugar
- ½ teaspoon vanilla extract
- â…“ cup all-purpose flour
- Pinch of salt
- Top Layer
- 4 tablespoons unsalted butter
( ½ stick) - 1 large egg
- ¾ cup light brown sugar (packed)
- ¼ teaspoon vanilla extract
- ½ cup all- purpose flour
- Pinch of salt
- ½ teaspoon baking powder
- â…“ cup butterscotch chips
- Directions
- Preheat oven to 350 degrees F.
- Grease 9” square baking pan with butter and dust with flour. Tap out the excess flour.
- Bottom Brownie
- Melt the butter and bittersweet chocolate in a heavy saucepan over low heat. Stir constantly. When melted, remove from heat and set aside.
- Cream the eggs, granulated sugar, and vanilla until smooth. Add the cooled chocolate and combine until well blended.
- Measure the flour and salt. Sift together directly into the chocolate batter. Mix gently until no trace of the dry ingredients remains.
- Spread the batter evenly into the prepared baking pan. Set aside.
- Top Layer
- Melt the butter in a small pan over low heat. Set aside.
- In a bowl, beat the egg, brown sugar and vanilla together. Add the cooled melted butter and continue beating until well combined
- Measure the flour, salt and baking powder. Sift together over the batter. Mix gently. Stir in the butterscotch chips.
- Spread the batter evenly over the Bottom Brownie layer.
- Bake for 32 minutes or until a toothpick inserted in the middle comes out clean or only crumbs.
- Remove the pan from the oven. Set aside to cool for at least one hour.
- Cut just before serving.
- 12-16 bars.
