Congo Bars - March, 2023.

This recipe is fun to make and more fun to eat.
It’s got something for the “kid” in each of us. Yep, a lot of ingredients, but don’t let that stop you. Easy to make. Perfect to enjoy after a soccer work-out or sitting in front of a TV game.
This recipe is on pages of 43 and 44 of Fat Witch Brownies (our first cookbook).
- Ingredients
- Crust
- ¼ cup all-purpose flour
- ¼ teaspoon baking powder
- 1 teaspoon salt
- 1 cup graham crackers (approximately 11 whole crackers crushed
- â…“ cup packed light brown sugar
- 7 tablespoons unsalted butter, at room temperature
- Topping
- 1¼ cups sweetened coconut flaked
- ½ cup semisweet chocolate chips
- ¼ cup milk chocolate chips
- ¾ cup sweetened condensed milk
- â…“ cup chopped pecans or other nuts (optional)
- Directions
- Grease a 9" square baking pan with butter or cooking spray. Dust with flour and tap out the excess. Preheat the oven to 350 degrees F.
- Crust
- To make the crust – sift the flour, baking powder and salt together into a large bowl.
- Stir in the graham cracker crumbs and light brown sugar.
- Mix well.
- With a fork, add the butter, a couple of butter pieces at a time and mix into the dough until it is crumbly.
- When all the butter is added, finish mixing with your hands until smooth.
- Spread the dough evenly in the prepared baking pan.
- Bake for 10 minutes. The crust should be slightly golden. Set aside.
- Spread the dough evenly pressing down with your hands, on the bottom of the prepared pan.
- Bake for 10 minutes or until the crust is slightly golden.
- Remove the pan from the oven and set aside.
- Topping
- While the crust is cooling, put together the topping.
- Mix the coconut, chocolate, and condensed milk together with a wooden spoon.
- If desired, add the pecans.
- Spread the mixture evenly over the baked crust.
- Bake for 20 minutes until the topping is set.
- Do. not let the topping bubble over or get too dark.
- Remove the pan from the oven and let cool for 2 hours
- The chocolate chips should be firm before cutting and serving. 12-16 pieces
