Maple Pumpkin Oatmeal Bars - October 2024

This homey treat can be as organic as the ingredients you use. And, it’s a vegan recipe.

One word of advice – use REAL maple syrup, nothing imitation. You don’t need to be in costume for this treat!

 

  • Ingredients
  • ½ cup pure maple syrup
  • 1 cup coarsely chopped pecans
  • ½ cup melted coconut oil
  • 1 cup pumpkin puree (used canned without any sugar or spices)
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 ½ cups quick cooking oats (NOT instant)
  • 1 teaspoon salt
  • Directions
  • Preheat the oven to 350 degrees F.
  • Grease a 9” square baking pan with canola oil or vegetable oil.
  • Dust with flour and tap out the excess.
  • In a medium bowl, toss together pecans with the maple syrup.
  • Set aside for 10 minutes.
  • Stir the oil, pumpkin, and vanilla into the pecan mixture.
  • Sift the flour and salt together into a large bowl.
  • Add the oats and mix with a fork.
  • Add the pumpkin mixture and stir (large wooden spoon) until well combined.
  • Using a spatula (or clean hands), spread the dough evenly into the prepared pan
  • Bake for 35 minutes or until the top is golden and the edges are starting to pull away from the sides.
  • Remove the pan from the oven and let cool for at least 1 hour.
  • Cut just before serving.
  • 12-16 pieces.
